150ml | plant milk |

Despite being in a city of plantbased heaven over the last few days, its good to be home where I can whip up some thick and fluffy, blueberry pancakes this weekend. There's nothing like a homemade breakfast!
METHOD
- Blend all pancake ingredients until smooth and bright purple
- Heat a frying pan and spray with coconut oil, fry on medium heat for approximately 1 minute
- When the top side starts to bubble and flip, cooking the 2nd side for 1 minute
- Stack up and serve with toppings of your choice (I used agave syrup and bananas)
